Job Description:

SUMMARY: To oversee the Tradewinds kitchen ensuring quality food in a timely manner. Responsible for a high level of guest service as described in your departments guest service standards.

ESSENTIAL DUTIES AND RESPONSIBILITIES
? Hire, schedule, train, coach, and evaluate staff and conduct performance reviews
? Direct daily work activities and inspect completed work for conformance to standards
? Manage kitchen in an efficient manner by maintaining good communications with management and staff
? Complete orders, ensure quality and rotation of products and complete month-end inventory while monitoring and controlling waste
? Ensure quality food preparation and presentation
? Collaborate with Executive Sous Chef to review, revise and create menus
? Ensure kitchen safety, cleanliness, sanitation and food handling procedures conform to Indian Health Standards
? Responsible for financial performance of Tradewinds including labor, food costs and other controllable expenses
? Ensure the appearance and maintenance of kitchen equipment working with the Executive Steward to maintain equipment and ensure a regular cleaning schedule

KNOWLEDGE AND CERTIFICATION, SKILLS AND ABILITIES
Knowledge and Certification
Required:
? 8 years culinary experience
? 5 years supervisory or Sous Chef experience
? Proven knowledge of the proper food handling procedures

Preferred:
? Culinary degree or American Culinary Federation Certification

Skills
Required:
? Accurate and detail-oriented
? Highly organized and ability to adapt quickly to changing priorities
? Computer skills Microsoft Office (Word, Excel and Outlook) and Windows
? Excellent written, verbal and interpersonal communication skills

Abilities
Required:
? Ability to follow established dress code policies and practice good personal hygiene
? Ability to interact with guests, coworkers and management in a professional and courteous manner
? Ability to serve both internal and external customers
? Ability to manage departmental budget and control labor and expenses
? Ability to speak in a clear, concise and pleasant voice
? Ability to develop and implement standard operating procedures

REQUIRED TRAINING
? Treasure Island guest service training
? Bloodborne Pathogens training
? Effectively Handling Harassment training
? Treasure Island food handling procedures
? Any position-related training as determined by department manager

PHYSICAL DEMANDS
? Must be able to walk and / or stand and exert fast-paced mobility for periods of up to 8 hours
? Must have a good sense of balance, and be able to bend and kneel and stoop
? Must be able to reach and twist routinely
? Must be able to push, pull and grasp objects routinely
? Must have the ability to independently lift 25+ pounds routinely
? Must be able to perform repetitive hand and wrist motions
? Must have good eye hand coordination
? Must be able to operate foot pedals

WORKING ENVIRONMENT
? Work is performed in the kitchen including fumes and hot and cold temperatures and may include going onto the gaming floor, which has flashing lights, frequent loud noises and cigarette smoke
? Must be willing to work a flexible schedule including all shifts, weekends and holidays
? Occasionally must deal with angry or hostile individuals

Team members should respect the privacy of guests and other team members and maintain confidentiality of business practices.

Employees in this position are required to maintain a valid driver’s license. Driving records will be checked periodically. Employees must report to their supervisor any chargeable vehicle accidents, DUI/DWI and / or moving violations, which may be grounds for termination of employment. Employees must demonstrate the ability to safely operate passenger vehicles with manual and automatic transmissions. Employees can have no major violations in the last 3 years, including but not limited to, driving under the influence, vehicular homicide, reckless driving, drugs or leaving the scene of an accident. In addition, employees must meet the following motor vehicle requirements (a) Maximum of 2 moving violations in the last 3 years in combination with 1 at-fault accident; or (b) Maximum of 2 at-fault accidents in the last 3 years with no moving violations.
